Cold pressed is a familiar term that has to do with how the oil is extracted.  Few oils are truly cold pressed, which means little to no heat was used to extract the oil.  Olive oil, sesame oil and peanut oil are really only the oils that are truly cold pressed.  To be considered cold pressed, it means that the temperatures used never go above 120 degrees.  Cold pressed oils are very valuable, and are high in nutrients, vitamin E, and minerals.

Expeller pressed means that the oil is extracted from the seed or fruit by using some type of heat.  The more pressure that is used, the more heat is generated in the pressing process.  Oils that are expeller pressed still have more taste and aroma than others as long as they are unrefined.

There are refined oils and unrefined oils.  The difference has to do with whether the oil is better suited for cooking or use on non cooked items such salad dressings, marinades and condiments and what has been done to the oil to ready it for use.

Refined oils are usually pale in color, and bland making them great for cooking because the taste of the oil doesn’t overpower the food you are cooking.  Refined oils are used in medium and high temperature cooking, baking, sautéing and also for frying.  Some examples of oils that are usually refined are: canola, almond, corn oil, avocado, olive, peanut, safflower, sesame and grape seed.

Only take the oils out of the fridge long enough to use them and them put them back in the refrigerator so the heat and light don’t affect them.  As a rule, refined oils that are high in monounsaturated fats can last up to a year kept in the refrigerator, while polyunsaturated fat oils keep about 6 months.

The better grades of extra virgin olive oils also keep about a year in the refrigerator after they’ve been open and regular olive oils keep about 8 months or so.   The way to tell if the oil is good or bad is to smell it.  Bad oil will have a rancid smell and you will definitely know it’s not good for use.
